She attended school in a one-room school house in Henry County until the age of 14 when the family moved to El Dorado Springs, Missouri, where she went to El Dorado Springs High School. In 1948, Jessie was united in marriage to Alvin York and had two sons. On October 17, 1964, she married the love of her life, Raymond Hensley, and together they raised cattle, horses, and many acres of peaches, prunes, and almond trees. In 1991, Jessie and Raymond moved back to El Dorado Springs, where they continued to raise cattle and farm. Jessie enjoyed reading, playing cards, bowling, dancing, cooking, canning, bird watching, and loved spending time with her grandchildren. Jessie once canned over 100 quarts of peaches in a year.
